This plant is also known as Blue Sailor. It usually has only a few flowers on each plant, and each flower can live only one day. It is a non-native, brought here from Europe. Chicory grows on the side of paths, along fence lines and in vacant lots.

Some people boil the roots and eat them as a vegetable. Or they crush and dry the roots to add to coffee to make it taste stronger. Cows, horses and other farm animals really like to eat Chicory.
